Week 3 of our Head Office Strawberry Teas has been another big success! This week we have refrigerator cake, cookies and cream cupcakes, blueberry muffins, scones with jam and dark chocolate brownies - all kindly baked and brought in by DP staff:
Recipe of the week is generously supplied by Jenny Duce from DP Creative with her dark and crunchy refrigerator cakes. They had sold out by lunch time - a sure sign of a hit!
Jenny Duce's Refrigerator cake
400g butter
100g cocoa powder
200ml golden syrup
300g digestive biscuits
100g raisins
- Crunch up the digestive biscuits with the raisins
- Melt the butter, cocoa powder and golden syrup together in a pan over boiling water and once melted, add to the digestive biscuits and raisins and mix thoroughly
- Press into a prepared baking tray and press firmly, roll over the top with a rolling pin to compress, leave to cool in tray
- Place in fridge to set over night
